Makes roughly 30 dumplings
Ingredients:
For the Filling:
- 1 cup dried lobster mushrooms, rehydrated and finely chopped
- 1/2 cup shredded cabbage
- 1/2 cup shredded carrots
- 3 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon fresh ginger, grated
- 1 teaspoon agave syrup or maple syrup
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
For Dipping Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon agave syrup or maple syrup
- 1 teaspoon finely chopped green onions (optional)
Other:
- Pre-made dumpling wrappers
Instructions:
For the Filling:
1. Rehydrate the dried lobster mushrooms according to the package instructions. Once rehydrated, finely chop them.
2. In a large mixing bowl, combine the chopped lobster mushrooms, shredded cabbage, shredded carrots, green onions, minced garlic, soy sauce, sesame oil, ginger, agave syrup, black pepper, and salt. Mix well until all ingredients are evenly distributed.
Assembling and Cooking the Dumplings:
1. Take a pre-made dumpling wrapper and place a spoonful of the filling in the center.
2. Moisten the edges of the wrapper with water and fold it in half, pressing the edges to seal the dumpling.
3. You can crimp the edges or create pleats for a decorative touch.
4. Heat a non-stick skillet over medium heat and add a small amount of oil.
5. Place the dumplings in the skillet, ensuring they are not too crowded. Cook for 2-3 minutes until the bottoms are golden brown.
6. Carefully add water to the skillet, enough to cover the bottom, and cover with a lid. Allow the dumplings to steam for an additional 5-7 minutes or until the wrappers are cooked through.
7. Remove the lid and let the dumplings cook for an additional 2-3 minutes until the bottoms become crispy again.
For the Dipping Sauce:
1. Mix together soy sauce, rice vinegar, sesame oil, agave syrup, and finely chopped green onions (if using).
2. Serve the dumplings hot with the dipping sauce on the side.
